Did you know Persimmon's are a highly sustainable crop? Starting in 2018 we will be part of a 3-year government grant to pursue the use of this fruit in the production of vinegar as asustainable alternative to apples. In the meantime, this harvest gave us a chance to experiment and thank goodness for that,because we’ve learned a lot about how to best process these vitamin packed andinteresting fruits. We are still exploringusing this shrub, but so far, so good.
